yummy nummy's


here is an ABSOLUTELY AMAZING RECIPE!!!!
i just happen to come across it in my moms Wegman's magazine.

Marley loved it! my sister loved it and my mom is currently making it for her and my dad to have with dinner tonight...seriously YUMMY!!!!

1 cup quinoa - i lightly toasted it in sesame oil, added 1 1/2 cup water, the juice of 1 fresh lemon and about 1 teaspoon of lemon pepper
1 bunch spring onions chopped
2 plum toms (take out some of the inside juicy parts so it doesn't make it to mushy) diced
1 cup cilantro
4 ears of corn (steamed in the microwave then cut off the cob)
2 avocados diced (put right before serving)
chill and serve...delicious!

pizza anyone?

1 whole wheat pizza dough (uncooked in a bag) i like the Harris Teeter brand but Trader Joe's has a good one too!
Organic Newman's Marinara
Red Onion
Plum Toms
Fresh Basil
Italian Seasoning
Moz Cheese

that's all you need to make your own delicious pizza, oh and the AMAZING pizza stone my father in-law got me!!!! I LOVE IT!




with all of these yummy concauctions i truely enjoy watermelon, in this hot summer weather (which i love) i could not ask for anything better than cold sweet watermelon...well maybe a

Memorial Day weekend ends with a BB-Q's and fun "Kind" style!

we had a busy but fun weekend, Trae had a sleep over with his an-dad on Friday, while i was working a Thirty-One party (which was interesting to say the least, the power went out about an hour into it). Murf and Marley had a chill night at home...our Saturday was filled but not to the rim. Murf golfed, Marley played in the pool (and bucket) with neighborhood friends, followed up by and amzing dinner at El Tio's in Gainesville, YUMMY Mexican food.
i ordered vegetable fajitas and it was AMAZING! the veggies consisted of broccoli, zucchini, carrots, and the usual onions and green peppers, it was sooo good. that is a meal i will be cooking at home in the future.



Sunday was most defiantly Sunday Funday!
we spent the day at an annual memorial day pig roast, the kids played and played and played in the pool and slides! while Murf played corn hole and pool with the guys and all us ladies sat on blankets getting some sun and keeping an eye on the kids (that's how it aways is).
i was lucky enough to find LOTS of watermelon and a delicious Asian cabbage salad for dinner, it was a really fun time!



and so my husband and son want RIBS for dinner, so to go along with their ribs and my CRAB CAKES!! YUMMY! i made a homemade potato salad and cut up a watermelon.
i could not wait for dinner.







just so you all know i am still in the "flirting" stage, to go completely "Kind" superhero style you need to cut out all dairy products as well and i am just not ready for that. i am still experimenting with meals and snacks, but i am LOVING all of this delicious food, and so is my body!

...and i am still only drinking about a half cup of coffee a day

eating "KIND" in my busy world!

know it is never easy to keep up with any diet or lifestyle when you are chasing kids around all day, but i have found left overs to be the best way to keep on track, that and if you know you will be away from home for a long period of time eat before you walk out the door, take snack and water and it should hopefully keep you away from the drive thru window.

so for lunch yesterday, which by the way i didn't get make until about 3:30 and i think i actually ate around 4:15, it only took about 5 min to make, but little princess Marley was in need of some extra attention so lunch got put on pause. once i finally got to enjoy it, oh did i, it was amazing, refreshing and totally satisfying.

i keep in my fridge whole wheat tortilla's (from costco) and hummus (also from costco), i would highly recomend you do the same...the tortilla's can be cut up in to 1/8th and toasted in the oven with a little sesame oil and sea salt...then dipped in to the hummus, a favorite snack of mine.

back to lunch, so i made a whole wheat tortilla with hummus, quinoa* (left over from Tuesday) and fresh cucumber, add some soy flaxseed tortilla chips and lunch is served!



this delicious lunch was followed up by a portabello mushrooms on the grill, steamed french green beans and pinapple for dinner last night, another YUMMY meal!

*quinoa recipe includes: quinoa, dried cranberry, toasted sunflower seeds, cinnamon, a bay leaf, pinch of salt, water and any broth cube flavor you have on hand (only a quarter of it)

it was Earth Day and so my KIND journey began...




i had a few mins on my hands, and what do i usually do when that happens...check FB status updates :) and little did i know the adventure this would start... a FB friend had this as her status update: Happy EARTH day :) I'm reading "the kind diet" and I wish I could save the planet. I'm making my own changes though :) i was intrigued to say the least... my first step was to download the sample book to nook on my iPhone and start reading ... i was hooked! it was a book about losing weight, helping the animals and saving the planet all while eating the food i already ate just in better form and taking out all the bad things that i shouldn't be eating anyway...but best of all i didn't have to give up CARBS!!! actually good healthy carbs are a MUST for this diet/ which i would not call a diet at all it is more of a lifestyle.

i have been "flirting" with this new lifestyle since i started reading the book. first i cut out as much meat as possible...that was not hard at all...then i added more and more vegetables (FRESH, not frozen and not canned). this week i have started adding new foods to my daily meals and snacks, i made a delicious quinoa, with dried cranberries and sunflowers...YUM! and for lunch today polenta (Trader Joe's Organic) with marinara(Newman's Own), french style green beans (Costco) with toasted sesame seeds and fresh champagne mango (Costco)...WOW it was good, Marley ate half my green beans off my plate, she loves her veggies and she even had the quinoa for breakfast this am and was a huge fan!



i have also noticed that without trying i a drinking less coffee this week...i used to drink 2 cups in the morning...the past 2 days i have had 1/2 a cup... and no desire to warm it back up and finish it (a daily occurrence when you have little ones)

snacks...fresh cold edemame (marley's fav) and hummus with homemade whole wheat tortilla chips or the ones with flaxseed from Trader Joe's (my new favorite store)...

this weekend i hope to make it to Whole Foods and add a few more new things to my fridge

i learned this one from my bff...add fresh fruit to your water for a little flavor :)
